Cans on the brain

All I can think about is canning. I can't wait until March 3rd, when my pressure canner comes.
I''m sorry if nobody wants to read about this, but remember canning can be a healthy, cost effective way to feed your family.
When you can you know exactly what is in those cans. I'm making chicken soup and lentil soup. Each contain carrots, onions, celery, and homemade chicken broth. Chicken of course is in the chicken soup, and lentils and chopped tomatoes went into the lentil batch. That's it! No preservatives, added sugar or other chemicals. I love that idea.
I'd love to know what you guys think. Do you can? If so, what is in your cans/jars?
