Under Pressure

I love canning food. Last year a friend and I canned close to 60 pints of various jams, fillings, and applesauce. It was amazing! What we couldn't do is veggies, meats, or soups. These MUST be pressured canner. We were both too terrified to use a pressure canner, so fruits were good enough.
This week things changed. We've had a spell of bad weather and today the roads were so snowy that they cancelled snow(which in turn means I don't work). I had a feeling this would happen, so I bought some veggies yesterday, and got out a chicken and have been cooking all day. So far, lentil soup, yellow cake, and the first stages of curried chicken soup and chicken and rice have been made.
Now back to the pressure canner. Josh and I can't eat all these tasty thing before they go bad, so canning is my only choice. I asked around to see if anyone I knew had one, but nobody did, so buying one was my option. Amazon.com has amazing deals, so between March 2nd and March 5th I should be the proud owner of a new pressure canner.
Hopefully it doesn't explode, and I don't kill myself. :)
